Poke-style salad with tofu and sesame crunch kit

Ingredients

1 can (284 mL) of mandarin oranges whole segments
1 block (450g) of firm tofu, cubed
30 ml (2 tbsp.) of soy sauce
1 liter (4 cups) of basmati rice, cooked
1 bag (340g) of Florette Sesame Crunch Salad Kit
1/2 small red onion, sliced

Steps

  1. Drain the mandarins, taking care to keep 60ml (1/4 cup) of juice in a bowl. Set aside.
  2. In a large skillet, heat a little olive oil over medium heat. Cook the tofu on all sides for 8 to 10 minutes, stirring occasionally, until golden and crispy.
  3. Add the reserved mandarins juice and the soy sauce. Simmer for 2 to 3 minutes, until the liquid has almost completely evaporated.
  4. In four plates or bowls, divide separately the basmati rice, the mixed vegetables and the sesame sticks from the salad kit, the mandarins, the tofu and the red onion. Drizzle dressing from salad kit.
