Ingredients
Chicken salad
- 60 mL (1/4 cup) each: plain Greek yogurt and mayonnaise
- 30 mL (2 tablespoons) of cider vinegar or wine vinegar
- 5 mL (1 teaspoon) celery seed
- To taste, salt and freshly ground pepper
- 375 mL (1 1/2 cups) Florette coleslaw
- 1 red apple, unpeeled, diced
- 1 green onion, finely chopped
- 2 chicken breasts (about 450 g / 1 lb), grilled, diced
Sandwich
- 4 rolls of your choice (baguette, tortilla or ciabatta)
- To taste, Dijon mustard
- 4 cheese slices of your choice (Gruyère, Emmental, or Mozzarella)
Steps
- In a bowl, combine all the ingredients in the dressing. Set aside.
- In another bowl, combine the coleslaw, apple, green onion and chicken.
- Add vinaigrette, mix and set aside.
- Spread each mustard bread, then place a slice of cheese.
- Garnish with chicken and coleslaw salad.
