Carrot “Spider” Energy Balls

Ingredients
375 ml (1 1/2 cups) of pitted dates
375 ml (1 1/2 cups) of walnuts
375 ml (1 1/2 cups) of ground almonds
5 ml (1 tsp) of pumpkin pie spice
250 ml (1 cup) of Florette shredded carrots
60 pretzel sticks, broken in half
40 small candy eyes
Steps
- In the container of the food processor, place the dates, walnuts, ground almonds and spices. Mix for 1 to 2 minutes, until a homogeneous preparation is obtained.
- Add the carrots and mix again lightly. Do not overmix.
- Shape 20 balls using approximately 30 ml (2 tablespoons) of preparation for each one. If desired, decorate balls with pretzel pieces and small eyes.
