Cajun-Style Sweet Potato Taco Bowls

Ingredients
1 package (397 g) Florette Cajun sweet potatoes
450 g (1 lb) lean ground beef
4 Italian tomatoes, seeded and diced
15 ml (1 tbsp) chili seasoning
125 ml (1/2 cup) spicy mayonnaise
Also provide:
80 ml (1/3 cup) chopped green onions
Optional:
Crushed corn chips to taste
Steps
- Preheat the oven to 190°C (375°F).
- Place the sweet potatoes on a baking sheet lined with parchment paper. Bake for 15 to 18 minutes, turning the potatoes halfway through cooking.
- Meanwhile, in a large skillet, heat a little olive oil over medium heat. Cook the ground beef for 4 to 5 minutes, breaking down the meat, until it has lost its pink color.
- Add half of the diced tomatoes and chili seasoning. Continue cooking for 3 to 4 minutes, stirring occasionally.
- In a bowl, mix the remaining tomatoes with the green onions. Salt and pepper.
- In four bowls, separate the ground beef, Cajun sweet potatoes and tomato mixture. Drizzle in the spicy mayonnaise. If desired, sprinkle with crushed chips.
