Rice, chickpea, broccoli and apple salad

60 ml (1/4 cup) of 2% plain Greek yogurt
1 bag (312 g) of Florette Broccoli & Apple Salad Kit
500 ml (2 cups) of white rice, cooked and cooled
1 can (540 ml) of chickpeas, rinsed and drained
1/2 small red onion chopped
10 ml (2 tsp.) of apple cider vinegar


  1. In a salad bowl, mix the yogurt with the cider vinegar and the sachet of vinaigrette from the salad kit. Season with salt and ground pepper.
  2. Add contents of salad kit, cooked rice, chickpeas and red onion. Stir.
