Rice, chickpea, broccoli and apple salad

60 ml (1/4 cup) of 2% plain Greek yogurt
1 bag (312 g) of Florette Broccoli & Apple Salad Kit
500 ml (2 cups) of white rice, cooked and cooled
1 can (540 ml) of chickpeas, rinsed and drained
1/2 small red onion chopped
10 ml (2 tsp.) of apple cider vinegar
- In a salad bowl, mix the yogurt with the cider vinegar and the sachet of vinaigrette from the salad kit. Season with salt and ground pepper.
- Add contents of salad kit, cooked rice, chickpeas and red onion. Stir.
